Taiwan persimmon is primarily produced from September to November. The two major varieties are the astringent persimmon and sweet persimmon. Astringent persimmons are larger in size and, become crispy after deastringency. Sweet persimmons are smaller and often eaten when soft. When this variety ripens on trees, it can be picked and peeled to eat, taste crunchy and juicy.
