Dinner: Made some risotto

Mia's been asking for risotto (it's mentioned in one of the books we read at night) so I decided to give it a try since I was alone in the beach house (wasn't feeling well - went out to relax) and it was raining so I had some time.

The risotto came out ok - a little more al dente than I would like - but good enough.

I also made a batch of lemon blueberry cheesecake squares but ran into trouble because I didn't have all the ingredients and didn't have the right size baking pan. But I improvised and what came out was pretty tasty (although it looked terrible).

the best way to get a great risotto is this:
(for 4 persons)

first of all make boil a pot of
vegetable broth.

slice in very smal pieces half of a whole onion and make it fry in a tablespoon of extra vergin olive oil in a anti adherent pot (medium size).
than, when onion has become golden, put in 4 handful of rice and make it toast for 3/4 minutes, than add a glass of wine and what the alcohl has evaporated add a dipper of broth.

add broth everytime rice starts to look too dry, until, tasting, you feel rice is ready.

leave it reast for 3 minutes with the cooker off, than add e nut of butter and than 3 tables spoons of parmigiano (parmesan).

it will be compact (al dente -but not too much-) and creamy but not overcooked.

it must be consumed immediatly.

if you will try it, hope you enjoy this recipe.
